I´m German for us bread needs to come in all sizes and shapes, all day every day. Being abroad and not having our beloved bread is a torture. I have to say no one really no one bakes bread like Germans. There are even countries like Sweden where bread is baked with sugar……gross.

So here you go with the easy German style, the sourdough bread follows later.

vegan "Mett" fresh bread and vegan cheese

What you need:

First loaf:

400 g spelt flour
350 g rye flour
200 g seeds (sun flower, pumpkin and/or walnut)
400 ml warm water
50 g yeast
1 ½ Tablespoon salt

 

Second loaf:

400 g spelt flour
400 g rye flour
60 g caraway
30 g thyme
30 g marjoram
400 ml warm water
50 g yeast
1 ½ Tablespoon salt

 

How you do it:
Bread is really easy to do and you can put a lot of different ingredients in it. As long as you have the flour, yeast, salt and water you can experiment all you like. Dried tomatoes, olives, herbs of all kind, just go crazy!

First you measure the warm water and dissolve the yeast in it.

Then you blend the 2 kinds of flour together as long as it´s dry. Otherwise you will have strips in your bread that shows that you didn´t knead it well enough. It can also be a great fun add on to your bread!

Put in the rest of the ingredients and blend it, after that pour the water-yeast blending over the flour mix and knead it for 5 minutes.

Now let it rest for 20 min so the yeast can expend. Heat the oven to 200 °C. For two loaf you need to bake it for 75 min.

If you have nothing to put the bread in while baking also put a bowl filled with water in the oven so your bread doesn´t try out.
